At Bacon, it’s okay to pig out

On the corner of 10th and Lamar, bacon lovers are bound to recognize the mouthwatering aroma permeating the outside air. Austin foodies have rejoiced at the newest establishment to hit the restaurant scene that is simply called Bacon.

Bacon opened on Sept. 9 and shockingly sold out to more than 700 customers on the first day, according to manager Jesse Fincher.

“It was absolutely crazy,” Fincher said.

Staying true to the ongoing obsession of bacon mania, chefs Tyler Johnson and Stephen Miles have developed a menu that features bacon in and out of the taste bud spotlight.

“We’ll have our set menu that has your traditional items, your familiar stuff,” Fincher said. “And then [we’ll] really just knock your socks off with some awesome specials.”

The fixed menu includes breakfast served all day, appetizers and entrees with a bacon twist. In some dishes, like the Best BLT and bacon waffle, bacon plays the lead role.  In others, the sweet and savory treat is visible only in flavor.

Bacon features two distinct and flavorful types of bacon everyday among other daily specials. Even pork belly – the thicker, more fatty version of bacon – graces the specials menu from time to time.

A bacon cookie with varying types of bacon is a tasty treat for dessert, although the combination might be more of an acquired taste for some.

The restaurant isn’t embarking upon anything too experimental with bacon but is open to pairing bacon with both expected and unexpected foods.

“[Bacon] is welcome everywhere,” Fincher said.

And at Bacon, everyone is welcome. The restaurant even caters to vegans and vegetarians, offering up tempeh bacon as an alternative on many dishes.

Bacon is also following the growing trend of using farm to table products. Ingredients are local, and all dishes and sauces are made in-house.
